    Breakfast: Egg And Cheese Bake

    • 1 (24 ounce) carton small curd cottage cheese
    • 1 (10 ounce) package frozen chopped broccoli, thawed and drained
    • 2 cups shredded cheddar cheese
    • 6 eggs, beaten
    • 1/3 cup flour
    • 1/4 cup butter or margarine, melted
    • 3 tablespoons onion, finely chopped
    • 1/2 teaspoon salt
    • Shredded cheese, optional


    Instructions


    1. In a bowl, combine first 8 ingredients; mix well. Pour the mixture into a greased crockpot. Cover and cook on high 1 hour; stir.

    2. Reduce the heat to low. Cover and cook for 2 1/2 to 3 hours or until the temperature reaches 160 degrees and the eggs are set. Sprinkle with cheese and serve.

    3. Makes 6 servings.
