Vegetable: Glazed Sweet Potatoes

- 2 pounds sweet potatoes
- 2 tablespoons cornstarch
- 2/3 cup orange juice
- 2 tablespoons lemon juice
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/3 cup chopped pecans, toasted
Instructions
- Peel and slice potatoes into 1/2" slices. Place in a crockpot that has been sprayed with nonstick vegetable spray.
- In a bowl, dissolve the cornstarch in orange and lemon juices.
- Add the remaining ingredients to the cornstarch mixture and pour over the sweet potatoes.
- Cover and cook on low for 7 to 9 hours.
- Serves 8 to 10
