Beef: Mexican Meatloaf

List of Ingredients
- 2 pounds ground beef
- 2/3 cup taco sauce
- 4 tablespoons packaged taco mix (or more)
- 2 cups coarsely crushed corn chips or doritos, more if needed
- 2 large eggs, lightly beaten
- 1 cup grated monterey jack or cheddar cheese
Instructions
- In a large bowl, mix all ingredients. Shape into a loaf and place in a crockpot.
- Cover and cook on low 8 to 10 hours or on high 3 1/2 to 5 hours or until meat is no longer pink inside.
