    Pork: Pork Marengo

    List of Ingredients


    • 2 pounds boneless pork shoulder, cut into 1" cubes
    • 1/2 cup onion, chopped
    • 2 tablespoons cooking oil
    • 1 (15 ounce) can diced tomatoes
    • 1 teaspoon chicken bouillion granules
    • 1 teaspoon dried marjoram, crushed
    • 1 teaspoon salt
    • 1/2 teaspoon dried thyme, crushed
    • 1 dash pepper
    • 1 (3 ounce) can mushrooms, chopped
    • 1/3 cup water
    • 3 tablespoons flour
    • Cooked rice


    Instructions


    1. In a skillet, brown half of the pork cubes and chopped onion at a time in hot oil; drain off fat. Trasnfer meat and onion to crockpot.

    2. In same skillet, combine undrained tomatoes, bouillon granules, marjoram, salt, thyme and pepper. Stir together, scraping browned bits from bottom of skillet. Pour over pork.

    3. Cover; cook on low for 8 to 10 hours.

    4. Turn to high and stir in drained mushrooms.

    5. Blend cold water slowly into flour; stir into pork mixture.

    6. Cook, uncovered, on high until thickened, 15 to 20 minutes, stirring occasionally.

    7. Serve over rice.
