Vegetable: Roasted Vegetable Pot

- 3 cups potatoes, sliced
- 2 cups carrots, sliced
- 1/2 cup onion, chopped
- 1 (15 ounce) can beef broth
Instructions
- In a 6 quart slow cooker, combine potatoes, carrots, and onion. Pour broth evenly over all. Cover and cook on high for 4 to 6 hours. Mix well before serving.
- Makes 6 to 8 servings.
