    Vegetable: Roasted Vegetable Pot

    List of Ingredients


    • 3 cups potatoes, sliced
    • 2 cups carrots, sliced
    • 1/2 cup onion, chopped
    • 1 (15 ounce) can beef broth


    Instructions


    1. In a 6 quart slow cooker, combine potatoes, carrots, and onion. Pour broth evenly over all. Cover and cook on high for 4 to 6 hours. Mix well before serving.

    2. Makes 6 to 8 servings.
