- 2 cups cooked rice
- 2 cups frozen corn
- 1 (16 ounce) can pinto beans
- 1 can rotel tomatoes
- 4 ounces velveeta lite, cubed
Instructions
- In a crockpot, combine rice, corn, pinto beans and rotel tomatoes. Add cubed cheese. Cook on low until all of the cheese melts.
