Lemon Refrigerator Cheesecake

- Crust: 1 cup graham cracker crumbs
- 2 tablespoons butter, melted
- 1 tablespoon sugar
- Cheesecake Filling:
- 2 (8 ounce) packages cream cheese, softened
- 1 (14 ounce) can sweetened condensed milk
- 1/2 cup plus 1 tablespoon fresh lemon juice
- 2 cups heavy cream, whipped
- 3/4 cup chopped pecans
Instructions
- Preheat oven to 400 degrees.
- For crust, mix graham cracker crumbs, butter and sugar. Pat into a 9 inch springform pan. Bake 10 minutes. Cool before adding cheesecake filling.
- For cheesecake filling, cream softened cream cheese with sweetened condensed milk and lemon juice. Fold in whipped cream and pecans. Pour over baked graham cracker crust and refrigerate for several hours. May be frozen.
