    Mini Cheesecakes

    List of Ingredients


    • 1 (8 ounce) package cream cheese, softened
    • 1/3 cup sugar
    • 1 egg
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon almond extract
    • 8 drops red food color
    • 12 vanilla or chocolate wafers
    • melted chocolate (optional)
    • fresh or frozen raspberries (optional)


    Instructions


    1. Beat cream cheese until light and fluffy.

    2. Gradually beat in sugar, scraping sides of bowl.

    3. Add egg and beat well.

    4. Mix in extracts and food color.

    5. Arrange paper liners in 12 2 1/2" muffin cups.

    6. Place a wafer in the bottom of each paper liner.

    7. Evenly divide cheese mixture among cups.

    8. Bake in preheated 350 degree oven 25 to 30 minutes, or until edges are lightly browned.

    9. Refrigerate overnight, then drizzle with melted chocolate, if desired.

    10. Top with fresh or frozen raspberries, if desired.
