Pineapple Cheesecake

- 6 large graham crackers, crushed
- 1/4 cup butter, melted
- 2 tablespoons sugar
- 2 (8 ounce) packages cream cheese, softened
- 2 eggs
- 1/2 cup sugar
- 1/2 teaspoon vanilla
- 2 cups crushed pineapple, drained
- cinnamon
- 1/2 cup sour cream
- 3 tablespoons sugar
- 1 teaspoon vanilla
Instructions
- Combine crushed graham crackers, 2 tablespoons sugar and melted butter. Press around sides and bottom of spring form pan for crust.
- Mix cream cheese, eggs, 1/2 cup sugar 1/2 teaspoon vanilla and 2 cups crushed pineapple. Put in spring form pan and bake for 20 minutes at 375 degrees. Cool for 1 hour or more.
- Combine 1/2 cup sour cream, 3 tablespoons sugar and 1 teaspoon vanilla. Pour over the top of cheesecake and bake at 375 degrees for 5 minutes. Cool and remove from spring form pan to serve.
