    White Chocolate Cheesecake

    List of Ingredients


    • Crust:
    • 1/2 cups chocolate graham cracker crumbs
    • 1/3 cup butter, melted
    • Filling:
    • 8 ounces white chocolate
    • 1 pound cream cheese
    • 1/2 cup granulated sugar
    • 3 eggs
    • 1 cup light sour cream
    • 1/2 teaspoon grated lemon rind
    • 1 teaspoon vanilla


    Instructions


    1. Crust: In bowl, combine graham cracker crumbs with butter.
    2. Place parchment paper in the bottom of a 9" springform pan.
    3. Spray pan with nonstick cooking spray on the sides and on the parchment paper.
    4. Press the crust into the bottom and slightly up the sides of the springform pan.
    5. Filling: Melt the white chocolate in the microwave; let cool for 5 minutes.
    6. Meanwhile, in a large bowl, beat cream cheese with sugar until light.
    7. Beat in eggs one at a time.
    8. Beat in white chocolate, sour cream, lemon rind and vanilla.
    9. Pour over crust; bake in a hot water bath in a 350 degree oven for 40 to 45 minutes or until just set.
    10. Let cool 10 minutes.
    11. Remove from hot water bath.
    12. Run knife around edge of cake to loosen.
    13. Let cool completely.
    14. Chill
    15. Yield: 10 to 12 servings
