White Chocolate Cheesecake

- Crust:
- 1/2 cups chocolate graham cracker crumbs
- 1/3 cup butter, melted
- Filling:
- 8 ounces white chocolate
- 1 pound cream cheese
- 1/2 cup granulated sugar
- 3 eggs
- 1 cup light sour cream
- 1/2 teaspoon grated lemon rind
- 1 teaspoon vanilla
Instructions
- Crust: In bowl, combine graham cracker crumbs with butter.
- Place parchment paper in the bottom of a 9" springform pan.
- Spray pan with nonstick cooking spray on the sides and on the parchment paper.
- Press the crust into the bottom and slightly up the sides of the springform pan.
- Filling: Melt the white chocolate in the microwave; let cool for 5 minutes.
- Meanwhile, in a large bowl, beat cream cheese with sugar until light.
- Beat in eggs one at a time.
- Beat in white chocolate, sour cream, lemon rind and vanilla.
- Pour over crust; bake in a hot water bath in a 350 degree oven for 40 to 45 minutes or until just set.
- Let cool 10 minutes.
- Remove from hot water bath.
- Run knife around edge of cake to loosen.
- Let cool completely.
- Chill
- Yield: 10 to 12 servings
