    • Filling:
    • 6 to 8 cups sliced peaches, thaw if frozen
    • 1/4 cup lemon juice
    • 3/4 cup orange juice
    • 2 cups sugart
    • 1 teaspoon each cinnamon and nutmeg
    • 1 tablespoon cornstarch
    • 1/2 cup butter or margarine
    • Crust:
    • 2 1/2 cups flour
    • 3 tablespoons sugar
    • 1 teaspoon salt
    • 1 cup shortening
    • 1 egg
    • 1/4 cup ice water


    Instructions


    1. Combine peaches, lemon juice, orange juice and butter in a saucepan. In a bowl, combine sugar, cinnamon, nutmeg and cornstarch. Blend well. Heat peaches with juices and butter until butter melts. Stir in dry ingredients. Remove from heat.
    2. Crust: Sift flour, sugar and salt. Add shortening and mix until crumbly. Whip egg and water, then sprinkle on flour mixture. Form dough and chill 30 minutes. Roll out 1/2 of the dough and place in a 13x9 inch baking dish, over bottom and 1/2 inch up the sides. Bake 20 minutes, Pour filling into crust and cover with remaining dough cut into strips. Sprinkle with 1 tablespoon sugar and 1 tablespoon butter. Bake at 350 degrees for 35 to 40 minutes.
