    Recipe Introduction

    From McCall's Cook Book (1963). Some versions of this recipe are made without rice, and some call for freezing.

    List of Ingredients

    2 cups cold cooked white rice, loosely packed
    1 can (8 3/4 ounces) pineapple tidbits, drained
    1/4 cup Maraschino cherries, drained and sliced
    12 marshmallows, quartered OR 1 1/2 cups miniature marshmallows
    1 cup heavy cream, whipped


    Recipe

    In medium bowl, lightly toss rice with pineapple, cherries and marshmallows to combine. Refrigerate, covered, 1 hour.

    Fold in whipped cream just before serving. Top with additional cherries if desired.

    Serves 6
