Holiday Raisin Pudding

- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1 tablespoon butter
- 1/2 cup milk
- 1/4 teaspoon vanilla
- 1/2 cup raisins
- 1/2 cup chopped walnuts or sliced almonds (optional)
- Sauce:
- 1 cup brown sugar
- 2 cups boiling water
- 2 tablespoons butter
Instructions
- In a small bowl, sift together first 5 ingredients. In a seperate larger bowl, combine sugar and butter; mix well.
- Add flour mixture to sugar mixture, alternating with milk. Then add vanilla, raisins, walnuts or almonds. Pour into large greased loaf pan.
- Sauce: Combine all three ingredients in a bowl and whisk together. Pour over pudding mixture and bake at 350 degrees for 40 to 45 minutes.
- Makes 6 to 8 servings
- Note: Place loaf pan on cookie sheet so it doesn’t boil over in oven. Serve with whipped cream if desired.
