Lemon Icebox Cake

List of Ingredients
- 3/4 pound vanilla wafers, graham crackers or chocolate wafer cookies, crushed and divided
- 1/3 cup butter or margarine, melted
- 2 tablespoons unflavored gelatin
- 2 tablespoons cold water
- 6 eggs, separated
- 2 cups sugar, divided
- Juice and grated zest of 3 lemons
- 1/4 teaspoon salt
Instructions
- Reserve 1/2 cup wafer crumbs. To remaining wafer crumbs, add butter. Line sides and bottom of a 9 inch springform pan with crumb mixture.
- Soak gelatin in cold water. Beat egg yolks with 1 cup of sugar until light. Add lemon juice, lemon zest and gelatin mixture. Cook in top of a double boiler until thickened. Cool.
- Add salt to egg whites. Beat until stiff. Fold in remaining sugar and lemon mixture. Pour into prepared pan. Sprinkle reserved crumbs over top. Chill atleast 8 hours before serving.
