Peanut Butter Bliss Bars

- 1/2 cup unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup creamy peanut butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 3/4 cup quick cooking oats
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 (6 ounce) package semi sweet chocolate chips
- Icing:
- 1 cup confectioners' sugar
- 4 tablespoons creamy peanut butter
- 4 tablespoons milk
Instructions
- Preheat oven to 350 degrees. Grease a 13x9" baking dish; set aside.
- In a mixing bowl, cream butter, both sugars and peanut butter. Add egg and vanilla; mix well. In a seperate bowl, combine flour, oats, baking soda and salt; stir into creamed mixture. Spread into prepared pan (the easiest way to do this is with an offset spatula, if you have one).
- Bake for 20 to 25 minutes or until lightly browned. Remove from oven and immediately sprinkle with chocolate chips. Allow pan with chips on to set 5 for minutes, and then spread the now melted chips evenly over the bars (chips will soften from the heat of the bars).
- Combine icing ingredients; spoon over bars and swirl to create a marbled effect with the chocolate (again, use the offset spatula). Cool completely before cutting.
- Makes 3 to 4 dozen
