Pineapple Pudding

- 1 cup sugar
- 3 tablespoons self rising flour
- 3 egg yolks, beaten (reserve egg whites)
- 1 1/2 cups milk
- 1 teaspoon vanilla
- 1 large can crushed pineapple, drained
- 1 box vanilla wafers
- 1/4 cup granulated sugar
Instructions
- Cream together, sugar, flour and beaten egg yolks.
- Add milk and vanilla.
- Cook until it starts to thicken.
- Add pineapple.
- Cook until real thick.
- Then put a layer of vanilla wafers, then pudding.
- Continue layers until all vanilla wafers and pudding have been used.
- Beat egg whites until stiff, adding 1/4 cup sugar.
- Spread on top of pudding.
- Brown in oven.
