    Pineapple Pudding

    • 1 cup sugar
    • 3 tablespoons self rising flour
    • 3 egg yolks, beaten (reserve egg whites)
    • 1 1/2 cups milk
    • 1 teaspoon vanilla
    • 1 large can crushed pineapple, drained
    • 1 box vanilla wafers
    • 1/4 cup granulated sugar


    Instructions


    1. Cream together, sugar, flour and beaten egg yolks.
    2. Add milk and vanilla.
    3. Cook until it starts to thicken.
    4. Add pineapple.
    5. Cook until real thick.
    6. Then put a layer of vanilla wafers, then pudding.
    7. Continue layers until all vanilla wafers and pudding have been used.
    8. Beat egg whites until stiff, adding 1/4 cup sugar.
    9. Spread on top of pudding.
    10. Brown in oven.
