Special Pumpkin Dessert

List of Ingredients
- Crust:
- 1 cup all-purpose flour
- 1/2 cup butter or margarine, softened
- 1/2 cup pecans, chopped
- Filling:
- 1 (8 ounce) package cream cheese, softened
- 2 cups cool whip, divided
- 1 cup powdered sugar
- 1 1/2 teaspoons vanilla, divided
- 1 (regular size) package instant vanilla pudding
- 1 cup canned pumpkin (or 1/2 of a 16 ounce can)
- 2/3 cup milk
- 3/4 teaspoon pumpkin pie spice
- More cool whip to frost the top (about 2 cups should do it)
- More chopped pecans to sprinkle on top, optional
Instructions
- Crust: Combine all ingredients. Spread and pat into the bottom of an 8 or 9 inch baking dish or pan. Bake at 350 degrees for 15 minutes. Let cool.
- Filling: Combine cream cheese, powdered sugar and 1 teaspoon of the vanilla. Beat with mixer until smooth. Fold in 1 cup of the cool whip. Spread on top of cooled crust.
- Mix pudding, pumpkin, 1 cup of cool whip, milk, 1/2 teaspoon of the vanilla and pumkin pie spice. Beat slowly with egg beater or whisk just until well combined. Pour on top of the cream cheese mixture. Spread more cool whip on top. Sprinkle with pecans, if desired
