    Spiced Peaches With Nutty Dumplings

    List of Ingredients


    • 1/2 cup low-fat biscuit and baking mix (such as bisquick)
    • 3/4 cup sugar, divided
    • 2 tablespoons chopped pecans, toasted
    • 3 tablespoons skim milk
    • 3/4 teaspoon butter extract
    • 2 cups canned peaches in juice, drained
    • 2/3 cup white grape juice
    • 1/4 teaspoon apple pie spice


    Instructions


    1. Combine baking mix, 2 tablespoons sugar and pecans in a bowl.
    2. Add milk and butter extract, stirring just until moist. Set Aside.
    3. Combine remaining sugar, peaches, grape juice and apple pie spice in a medium saucepan; bring to a boil over medium high heat.
    4. Drop dough into 4 mounds on top of boiling peach mixture.
    5. Cover, reduce heat to medium and cook 8 minutes or until dumplings are done.
    6. Spoon peach mixture evenly into 4 dessert dishes; top each with a dumpling.


    Final Comments


    There are about 2 2/3 cups drained sliced peaches in 1 (29 ounce) can. Store left over peaches in an airtight container in refrigerator for up to 5 days.
