Spiced Peaches With Nutty Dumplings

- 1/2 cup low-fat biscuit and baking mix (such as bisquick)
- 3/4 cup sugar, divided
- 2 tablespoons chopped pecans, toasted
- 3 tablespoons skim milk
- 3/4 teaspoon butter extract
- 2 cups canned peaches in juice, drained
- 2/3 cup white grape juice
- 1/4 teaspoon apple pie spice
Instructions
- Combine baking mix, 2 tablespoons sugar and pecans in a bowl.
- Add milk and butter extract, stirring just until moist. Set Aside.
- Combine remaining sugar, peaches, grape juice and apple pie spice in a medium saucepan; bring to a boil over medium high heat.
- Drop dough into 4 mounds on top of boiling peach mixture.
- Cover, reduce heat to medium and cook 8 minutes or until dumplings are done.
- Spoon peach mixture evenly into 4 dessert dishes; top each with a dumpling.
Final Comments
There are about 2 2/3 cups drained sliced peaches in 1 (29 ounce) can. Store left over peaches in an airtight container in refrigerator for up to 5 days.
