    Easy Bacon Quiche

    List of Ingredients


    • 6 large eggs
    • 1/2 teaspoon salt
    • 1 (8 ounce) block cream cheese
    • 1/2 cup heavy cream
    • 1/4 cup butter
    • 1/2 onion, chopped fine
    • Salt and pepper to taste
    • 6 to 8 slices of cooked bacon, crumbled
    • 2 cups grated cheddar or Monterey jack cheese


    Instructions


    1. Preheat oven to 350 degrees. Unsing a blender or food processor, blend the eggs, cream cheese, cream, butter, salt and pepper until smooth. Add the onions and pulse until onions are distributed. Pour into a 9 inch square glass baking dish prepared with nonstick cooking spray. Sprinkle the bacon evenly over the top and then add the grated cheddar over the bacon. Bake for 50 minutes or until a knife blade inserted into the center comes out clean. Serve hot. Makes a great base for lobster or shrimp bisque or try topping it with home made hollandaise or with mexican salsa from a bottle.
    2. Yield: 8 servings
