List of Ingredients



• 1 small zucchini, shredded
  
• 1 medium potato, shredded
  
• 1 medium tomato, seeded and diced
  
• 4 green onions, chopped
  
• 1 pound bacon, diced and cooked crispy
  
• 11 to 12 eggs
  
• 2 tablespoons milk
  
• 1 cup shredded monterey jack/ cheddar cheese
  
• 1 1/2 teaspoons salt
  
• 1/2 teaspoon pepper
  






Instructions



1. In a large bowl, lightly beat eggs and milk. Add remaining ingredients. Pour into an 11x7 inch baking dish which has been sprayed with cooking spray. Bake in preheated 350 degree oven until a knife inserted in center comes out clean. Sprinkle more cheese on top and return to oven to melt cheese.
