    Summer Vegetable Quiche

    List of Ingredients


    • 1 (16 ounce) frozen vegetable medley (cauliflower, broccoli and carrots), thawed and drained
    • 1 small can mushrooms, drained
    • 1 small onion, chopped
    • Dash of garlic salt and pepper
    • 2 cups shredded cheddar/ mozzarella mix cheese
    • 1/2 teaspoon dried basil
    • 2 cups chopped ham
    • 6 eggs
    • 4 tablespoons butter
    • 1/2 cup grated parmesan cheese


    Instructions


    1. Preheat oven to 350 degrees. Spray a 9x13 inch baking pan, or 2 pie pans with cooking spray.
    2. In a large skillet, saute onion, vegetable medley and mushrooms in butter with garlic salt for 5 to 7 minutes. In a large bowl, beat eggs; add ham, cheese, seasonings and vegetables. Mix well. Pour into prepared pan. Bake at 350 degrees for 45 to 55 minutes, or set and golden brown.
