Summer Vegetable Quiche

- 1 (16 ounce) frozen vegetable medley (cauliflower, broccoli and carrots), thawed and drained
- 1 small can mushrooms, drained
- 1 small onion, chopped
- Dash of garlic salt and pepper
- 2 cups shredded cheddar/ mozzarella mix cheese
- 1/2 teaspoon dried basil
- 2 cups chopped ham
- 6 eggs
- 4 tablespoons butter
- 1/2 cup grated parmesan cheese
Instructions
- Preheat oven to 350 degrees. Spray a 9x13 inch baking pan, or 2 pie pans with cooking spray.
- In a large skillet, saute onion, vegetable medley and mushrooms in butter with garlic salt for 5 to 7 minutes. In a large bowl, beat eggs; add ham, cheese, seasonings and vegetables. Mix well. Pour into prepared pan. Bake at 350 degrees for 45 to 55 minutes, or set and golden brown.
