    Chicken: Aztec Casserole

    List of Ingredients


    • 9 (6 inch) corn tortillas, halved
    • 2 (10 ounce) cans enchilada sauce
    • 1 1/2 to 2 cups sour cream
    • 2 cups shredded cheddar cheese
    • 2 (4 ounce) cans chopped green chiles
    • 1 cup corn
    • 1 pound boneless, skinless chicken breast meat, cooked and shredded


    Instructions


    1. Preheat oven to 350 degrees. In a medium bowl, combine the sour cream, cheese, chiles, corn and chicken; mix well.

    2. Dip 9 tortilla halves in the enchilada sauce and arrange them in a lightly greased 13x9" baking dish.

    3. Spread half of the chicken mixture over the tortilla layer. Repeat with remaining tortilla halves and chicken mixture.

    4. Bake in preheated oven for 25 to 30 minutes, or until the center is heated through.

    5. Makes 6 to 8 servings
