Beef: Beef Enchiladas

- 1 pound ground beef
- 1 medium onion, chopped
- 8 ounces shredded cheddar cheese
- Sauce
- 1 (15 ounce) can tomato sauce
- 2/3 cup water
- 1/3 cup chopped green onion
- 1 tablespoon chili powder
- 1/2 teaspoon dried mexican oregano leaves
- 1/4 teaspoon ground cumin
- 1 clove garlic, minced
- Tortillas
- 1/2 cup water
- 1 package 6" tortillas
- 8 ounces shredded cheddar cheese
Instructions
- Preheat oven to 350 degrees. In a 10" skillet, saute ground beef over medium heat until brown. Remove from heat and drain. Stir in onion and 8 ounces cheddar cheese. Set aside.
- In a saucepan, combine sauce ingredients. Heat to boiling, stirring occasionally.
- In a 10" skillet, heat water to almost boiling. Place one tortilla in water for 2 to 3 seconds. Drain immediately. Place on a plate and repeat with remaining tortillas.
- Scoop approximately 1/4 cup meat mixture onto each tortilla. Roll up and place in a 9x13" baking dish. Ladle sauce over the enchiladas. Sprinkle with remaining cheese.
- Bake uncovered for 20 minutes or until bubbly.
