    Chorizo Sausage Tortilla

    List of Ingredients


    • 4 tablespoons olive oil
    • 2 onions, sliced
    • 6 eggs
    • 1 pound potatoes, diced and boiled for a fw minutes
    • 6 ounces chorizo sausage, diced into 1/2 inch pieces
    • 2 tablespoons parsley, finely chopped, extra for garnish
    • Salt and pepper to taste


    Instructions


    1. You will need a heavey frying pan with a lid for this recipe. Heat the oil over medium heat and fry the onions for approx 3 minutes, stirring occasionally. Reduce heat to low and add the potato. Cover and cook for 15 to 20 minutes or until the onions and potatoes are soft, stirring occasionally.
    2. Stir in the sausage and cook for a few minutes or until the sausage is heated through. Meanwhile, beat the eggs together with the salt, pepper and parsley.
    3. Pour the over the potato and sausage mixture. Cover and leave to cook on low heat for about 30 minutes or until the eggs have set. Invert the tortilla onto a warmed plate and cut into serving portions. Garnish with chopped parsley.


    Final Comments


    You could substitute the Chorizo sausage for salami, or something similar. Replace some of the potato with zucchini or a favourite vegetable.
