Mike's Chicken Enchiladas

List of Ingredients
- 4 cups cooked chicken, chopped
- 1 cup chopped onion
- 1/4 cup margarine
- 1/4 cup flour
- 2 1/2 cups boiling water
- 3 cubes chicken boullion
- 8 ounces sour cream
- 2 cups grated cheese
- 1 (4 ounce) can chopped green chiles (or green pepper, chopped)
- 1 teaspoon ground cumin
- 10 (8 inch) tortillas
Instructions
- Cook onions in butter and add flour. Stir in water, then boullion. Remove from heat and add sour cream.
- In a large bowl, combine 2 cups of this sauce and 1 cup of cheese, chicken, chiles and cumin.
- Fill softened tortillas and place in a 9x13" pan. Top with remaining sauce and cheese. Bake for 25 minutes at 350 degrees.
- Serve with salsa.
