    Mike's Chicken Enchiladas

    List of Ingredients


    • 4 cups cooked chicken, chopped
    • 1 cup chopped onion
    • 1/4 cup margarine
    • 1/4 cup flour
    • 2 1/2 cups boiling water
    • 3 cubes chicken boullion
    • 8 ounces sour cream
    • 2 cups grated cheese
    • 1 (4 ounce) can chopped green chiles (or green pepper, chopped)
    • 1 teaspoon ground cumin
    • 10 (8 inch) tortillas


    Instructions


    1. Cook onions in butter and add flour. Stir in water, then boullion. Remove from heat and add sour cream.
    2. In a large bowl, combine 2 cups of this sauce and 1 cup of cheese, chicken, chiles and cumin.
    3. Fill softened tortillas and place in a 9x13" pan. Top with remaining sauce and cheese. Bake for 25 minutes at 350 degrees.
    4. Serve with salsa.
