Cajun Fish Fillets

- 1/3 cup all-purpose flour
- 1 tablespoon paprika
- 2 teaspoons chili powder
- 1/2 teaspoon freshly ground black pepper
- 4 thin, skinless white fish fillets, such as sole, cod or flounder (6 ounces each)
- 1 tablespoon vegetable oil
- Orange peel strips for garnish
Instructions
- On a sheet of waxed paper, combine flour, paprika, chili powder, and pepper. Mix well. Dredge fish in flour mixture, shaking off excess, turning to coat.
- In a large nonstick skillet, heat oil over medium-high heat. Add fish to skillet. Cook fish, turning once, until fish becomes opaque and flakes easily when tested with a fork, about 5 minutes. Place fish on individual serving plates. Garnish with orange peel strips and serve immediately.
