Coconut Fried Shrimp

- 1 cup Baker's angel flake coconut
- 1/4 cup flour
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 pound cleaned shrimp
- 1 egg, slightly beaten
- Oil for frying
Instructions
- Mis coconut, flour, salt and pepper. Dip shrimp in egg; roll in coconut mixture.
Heat oil in large deep skillet on medium heat to 325 degrees. Add shrimp; cook 3 to 4 minutes on each side or until golden brown. Drain on paper towels. Serve with lemon wedges or a sauce, if desired.
