    Coconut Fried Shrimp

    List of Ingredients


    • 1 cup Baker's angel flake coconut
    • 1/4 cup flour
    • 1 teaspoon salt
    • 1/8 teaspoon pepper
    • 1 pound cleaned shrimp
    • 1 egg, slightly beaten
    • Oil for frying


    Instructions


    1. Mis coconut, flour, salt and pepper. Dip shrimp in egg; roll in coconut mixture.
      Heat oil in large deep skillet on medium heat to 325 degrees. Add shrimp; cook 3 to 4 minutes on each side or until golden brown. Drain on paper towels. Serve with lemon wedges or a sauce, if desired.
