    Cod With Potatoes And Zucchini

    List of Ingredients


    • 3 large potatoes, peeled and sliced
    • 2 large zucchini, sliced
    • 2 pounds cod fillets
    • 1 large onion, cut into 1/4 inch sliced
    • 2 cups milk
    • 1/2 cup water
    • 1 bay leaf
    • 4 whole cloves
    • 1 teaspoon salt
    • 1/4 teaspoon crushed peppercorns
    • 3 tablespoons butter or margarine
    • 4 tablespoons all-purpose flour
    • 1/2 cup whipping cream
    • 1/4 teaspoon nutmeg
    • chopped fresh parsley


    Instructions


    1. Combine potatoes and water to cover in a saucepan. Bring to a boil. Cook for 5 minutes, then add zucchini. Cook until zucchini and potatoes are just tender. Drain.
    2. Meanwhile, arrange fish in a large skillet. Arrange onion over fish. Add milk, 1/2 cup water, bay leaf, cloves, salt and pepper. Bring to a simmer. Cook, covered, until fish flakes easily, about 5 minutes.
    3. Drain and reserve cooking liquid from fish. Melt butter in a medium saucepan. Add flour; stir well. Stir in reserved cooking liquid. Stir in cream and nutmeg. Cook, stirring, until thickened, 1-2 minutes. Remove from heat.
    4. Arrange fish and onions in the center of a platter. Arrange potatoes and zucchini around the edges. Pour sauce over fish and vegetables. Sprinkle with parsley. Serve hot.
