Cod With Potatoes And Zucchini

- 3 large potatoes, peeled and sliced
- 2 large zucchini, sliced
- 2 pounds cod fillets
- 1 large onion, cut into 1/4 inch sliced
- 2 cups milk
- 1/2 cup water
- 1 bay leaf
- 4 whole cloves
- 1 teaspoon salt
- 1/4 teaspoon crushed peppercorns
- 3 tablespoons butter or margarine
- 4 tablespoons all-purpose flour
- 1/2 cup whipping cream
- 1/4 teaspoon nutmeg
- chopped fresh parsley
Instructions
- Combine potatoes and water to cover in a saucepan. Bring to a boil. Cook for 5 minutes, then add zucchini. Cook until zucchini and potatoes are just tender. Drain.
- Meanwhile, arrange fish in a large skillet. Arrange onion over fish. Add milk, 1/2 cup water, bay leaf, cloves, salt and pepper. Bring to a simmer. Cook, covered, until fish flakes easily, about 5 minutes.
- Drain and reserve cooking liquid from fish. Melt butter in a medium saucepan. Add flour; stir well. Stir in reserved cooking liquid. Stir in cream and nutmeg. Cook, stirring, until thickened, 1-2 minutes. Remove from heat.
- Arrange fish and onions in the center of a platter. Arrange potatoes and zucchini around the edges. Pour sauce over fish and vegetables. Sprinkle with parsley. Serve hot.
