Garlic Baked Shrimp

- 1 1/4 pound medium shrimp, peeled and deveined
- 1/2 cup dry bread crumbs
- 3 tablespoons finely chopped parsley
- 1 teaspoon grated lemon rind
- 1/4 teaspoon salt
- 3 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 4 teaspoons olive oil
Instructions
- Coat 4 individual gratin dishes with cooking spray. Divide shrimp evenly among dishes; set aside.
- Combine the breadcrumbs, parsley, lemon rind, salt and garlic in a bowl; stir in lemon juice and oil. Sprinkle the breadcrumb mixture evenly over shrimp. Place dishes on a baking sheet. Bake at 400 F. for 13 minutes or until shrimp are done and breadcrumbs are lightly browned.
