Garlic Buttered Shrimp

- 2 pounds unpeeled large fresh shrimp
- 1/2 cup butter or margarine
- 1/2 cup olive oil
- 1/4 cup minced parsley
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon plus 1 1/2 teaspoons lemon juice
- 1 green onion, minced
- 4 cloves garlic, minced
- 1/4 teaspoon coarsely ground black pepper
- 2 teaspoons Goya Sazo'n Seasoning
- 8 ounces linguine, uncooked or thin spaghetti, or you can use whatever pasta you like
Instructions
- Peel and devein shrimp, leaving tails intact (tails may be removed, if desired). Set aside. Place butter in a 13x9x2" baking dish. Microwave, uncovered, at high 1 minute or until melted. Stir in olive oil and next 8 ingredients; arrange shrimp around outer edges of baking dish.
- Cover tightly with heavy duty plastic wrap and marinate in refrigerator at least 1 hour. Remove from refrigerator. Fold back a small corner of wrap to allow steam to escape while cooking and microwave at high for 7 to 7 1/2 minutes or until shrimp turn pink, rearranging shrimp every 2 minutes. Adjust seasoning to your taste. Cook linguine according to package directions; drain and place on a serving platter. Top pasta with shrimp mixture.
- Serve immediately.
