    • 1 (1 pound) can salmon, bones removed, drained and flaked
    • 2 cups fresh bread crumbs
    • 1 small onion, finely chopped
    • 1/2 cup shredded cheddar cheese
    • 1/2 cup fresh parsley, finely snipped
    • 2 tablespoons pimeto
    • 3 eggs
    • 1 cup skim milk
    • 1/4 cup lemon juice
    • salt and pepper


    Instructions


    1. Combine salmon, breadcrumbs, onion, cheese, parsley and pimento in a large bowl; work with your hands or a spoon to mix.
    2. Beat together the eggs, milk, lemon juice, salt and pepper.
    3. Pour and stir into the salmon mixture.
    4. Turn into a greased 1 1/2 quart casserole.
    5. Place casserole in a baking dish that contains 1" of hot water.
    6. Bake at 350 for 1 hour or until a knife inserted in the middle comes out clean.
    7. Makes 10 servings at 148 calories each.
