Lemon Shrimp Scampi

List of Ingredients
- 1 cup rice
- 3/4 pound large shrimp, cleaned
- 1 tablespoon olive oil
- 2 tablespoons minced garlic
- 2/3 cup chicken broth
- 1 tablespoon fresh lemon juice
- 1 tablespoon lemon pepper
- 5 tablespoons McButter natural butter sprinkles
- chopped parsley and lemon slices for garnish (optional)
Instructions
- Prepare rice according to packaged directions.
- Heat oil in nonstick skillet.
- Sauté garlic 1 to 2 minutes until soft but do not brown. Add in shrimp; cook 1 minute. Add broth, lemon juice, lemon pepper and McButter; increase heat and let boil 2 minutes.
- Pour and fold into cooked rice.
- Garnish with parsley and lemon slices.
