    List of Ingredients


    • 1 can Las Palmas Red Chile Sauce, divided
    • 1 cup uncooked regular long grain white rice
    • 1 cup water
    • 1 tablespoon olive oil
    • 2 garlic cloves, minced
    • 3/4 cup green bell pepper strips
    • 1 pound shelled, deveined, uncooked shrimp
    • 2 tablespoons lime juice
    • 2 tablespoons chopped fresh cilantro


    Instructions


    1. In a medium saucepan, combine rice, water and 1 1/4 cups of red chile sauce; mix well.
    2. Bring to a boil.
    3. Reduce heat to low; cover and simmer 20 to 25 minutes or until rice is tender, stirring occasionally.
    4. Meanwhile, in a large skillet, heat oil over medium high heat.
    5. Add garlic; cook 2 minutes.
    6. Add bell pepper; cook and stir 3 to 4 minutes.
    7. Add shrimp and lime juice; cook about 4 minutes or until shrimp turns pink.
    8. Stir in remaining chile sauce; cook until thoroughly heated.
    9. Spoon cooked rice mixture onto serving platter; top with shrimp mixture. Sprinkle with cilantro.
