    List of Ingredients


    • 1 fresh pineapple, cored and trimmed, cut into 1/2 inch rounds
    • 1 can of coconut milk (not cream of coconut)
    • Cinnamon sugar (just mix sugar with some cinnaon and a dash of nutmeg , if you desire)


    Instructions


    1. Pour coconut milk into a bowl. Dip pineapple slices into the milk several times each being sure to coat both sides. Dip the pineapple into the cinnamon sugar covering it completely.
    2. Lightly grease outdoor grill, indoor grill pan or frying pan. Grill the pineapple for several minutes on each side until caramelized.
    3. Place on a plate and spoon the sauce that remained in the pan over the pineapple. Serve as is or top with vanilla ice cream. I also sprinkled with a bit more cinnamon and some shredded dry coconut.
