Hawiian Pineapple

List of Ingredients
- 1 fresh pineapple, cored and trimmed, cut into 1/2 inch rounds
- 1 can of coconut milk (not cream of coconut)
- Cinnamon sugar (just mix sugar with some cinnaon and a dash of nutmeg , if you desire)
Instructions
- Pour coconut milk into a bowl. Dip pineapple slices into the milk several times each being sure to coat both sides. Dip the pineapple into the cinnamon sugar covering it completely.
- Lightly grease outdoor grill, indoor grill pan or frying pan. Grill the pineapple for several minutes on each side until caramelized.
- Place on a plate and spoon the sauce that remained in the pan over the pineapple. Serve as is or top with vanilla ice cream. I also sprinkled with a bit more cinnamon and some shredded dry coconut.
