    • 2 1/2 squares unsweetened chocolate, melted (2 1/2 ounces)
    • 2/3 cup shortening
    • 2 cups sifted cake flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 1/3 cups sugar
    • 1 teaspoon vanilla
    • 3 eggs (refrigerator temperature)
    • 1 cup milk (refrigerator temperature)


    Instructions


    1. Preheat oven to 350 or 375 degrees. Grease and flour pans or line with waxed paper.
    2. Melt chocolate and shortening and cool slightly. Mix and sift flour, baking powder, salt and sugar into mixer bowl. Add chocolate shortening mixture, vanilla, eggs and milk.
    3. Beat 30 seconds on low speed, scraping frequently. Beat 7 1/2 minutes on medium high speed of an upright mixer or 6 minutes at high speed with a portable mixer, scraping 4 to 5 times. Pour batter into pans.
    4. Bake at 350 degrees for approximately 30 to 35 minutes for 9x13x2" pan, 375 degrees for approximately 28 minutes for two 8" layer pans and (two thirds full) at 375 degrees approximately 25 minutes for 24 cupcakes.
