    Foods cooked at high altitude boil at a lower temperature, and traditional pecan pie recipes often need some adjustment to prevent boil over. Reducing the sugar and increasing the margarine/butter often solves the problem. Based on the classic pecan pie recipe; reduce the 1 cup sugar to 2/3 cup sugar and increase the margarine/butter by 1 tablespoon (1/3 cup).


    List of Ingredients


    • 1 unbaked 9 inch pie crust
    • 1/3 cup butter
    • 1 teaspoon vanilla
    • 3 large eggs
    • 2/3 cup sugar
    • 1 cup dark corn syrup
    • 1/2 teaspoon salt
    • 1 1/4 cups pecans, chopped or halved


    Instructions


    1. Preheat oven to 375 degrees. Beat eggs thoroughly with sugar, corn syrup, vanilla, and melted butter. Add the pecans and pour into pie shell. Bake 40 to 45 minutes until knife inserted comes out clean.
