    • 2 1/4 cups sifted cake flour
    • 1 1/4 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 cup cooking oil
    • 1/2 cup minus 1 tablespoon milk
    • 1/2 cup water
    • 1 teaspoon vanilla
    • 1/2 cup egg whites (3 or 4)
    • 1/4 teaspoon cream of tartar
    • 1 cup sugar


    Instructions


    1. Preheat oven to 375 degrees. Grease and flour or line two 8 inch layer pans with waxed paper.
    2. Mix and sift flour, baking powder and salt into mixer bowl. Add oil, milk, water and vanilla. Beat 2 minutes on medium speed, scraping frequently.
    3. In seperate mixing bowl, beat egg whites and cream of tartar until stiff but not dry. Add meringue to batter and fold in, using about 40 strokes. Pour batter into pans.
    4. Bake at 375 degrees approximately 27 minutes. Remove from oven and cool in pans about 12 minutes. Remove from pans and finish cooling on rack.
