    • 3 cups sifted cake flour
    • 2 1/2 teaspoons baking powder
    • 1 teaspoon salt
    • 1 1/2 cups sugar
    • 1 cup shortening (room temperature)
    • 1 1/4 cups plus 2 tablespoons milk (refrigerator temperature)
    • 2 teaspoons vanilla
    • 4 eggs (refrigerator temperature)


    Instructions


    1. Preheat oven to 350 or 375 degrees. Grease and flour or line bottom of pans with waxed paper.

    2. Mix and sift flour, baking powder, salt and sugar into mixer bowl. Add shortening, milk vanilla and eggs.

    3. Beat 30 seconds on low speed, scraping frequently. Beat 7 1/2 minutes on high speed of portable mixer.

    4. Pour batter into pans. Bake in preheated 350 degree oven for approximately 40 minutes for 9x13x2" pan, 375 degrees for approximately 25 minutes for three 8" layer pans and (half full) at 375 degrees for approximately 20 minutes for 36 cupcakes.

    5. Remove from oven and allow to cool in pans 12 minutes. Remove from pans and allow to finish cooling on rack.
