Beef: Beef Pot Roast

- 1/2 cup onion, chopped
- 2 tablespoons water
- 2 1/2 pound boneless beef chuck roast
- 2 cups hot water
- 1 beef bouillon cube
- 2 tablespoons orange juice
- 1/4 teaspoon ground allspice
- 1/8 teaspoon pepper
Instructions
- Simmer onion in 2 tablespoons water in a heavy deep skillet. Add roast to skillet; brown on all sides.
- Combine beef bouillon cube with 2 cups hot water; stir until dissolved.
- Combine orange juice, allspice, pepper and beef broth. Pour over meat. Cover and simmer about 2 hours.
- 4 servings, about 4 ounces beef each.
