Chicken: Chicken Casserole

- 12 slices whole wheat bread, crusts removed
- 3 boneless, skinless chicken breasts, cut in 1" chunks
- 1 cup diced celery
- 1/2 cup finely chopped onion
- 1 red or green bell pepper, diced
- 12 egg whites or egg substitute that equals 6 eggs
- 2 tablespoons fat free mayonnaise
- 2 cups fat free buttermilk
- 1 teaspoon rosemary
- 1 teaspoon marjoram
- 1/2 teaspoon ground ginger
- 1 can healthy request cream of mushroom soup
- 1/2 cup fat free shredded cheddar cheese (optional)
Instructions
- Spay a 9x13 inch baking dish with cooking spray. Line pan with 6 slices of bread.
- Place chicken, celery, onion and bell pepper over bread. Place 6 more slices of bread on top of the chicken and veggies.
- Lightly beat egg whites, mayonnaise, herbs and buttermilk. Pour over the top of bread. Let stand, covered in the refrigerator overnight.
- Bake at 350 degrees for 30 minutes. Pour soup over top. Bake for 30 more minutes.
- You can add 1/2 cup fat free shredded cheddar cheese during the last 5 minutes of baking. Let stand 10 minutes before serving.
