    Side Dish: Cornbread Dressing

    List of Ingredients


    • 1/4 cup water
    • 1 1/2 cups chopped celery (about 4 stalks)
    • 1 cup chopped onion (about 2 medium)
    • 3 cups cornbread crumbs
    • 4 slices stale or toasted whole grain bread, cut into cubes
    • 1/4 cup chopped fresh parsley
    • 1 teaspoon rubbed sage
    • 1 teaspoon poultry seasoning
    • 1 1/2 cups low sodium chicken broth
    • 2 egg whites, lightly beaten
    • cooking spray
    • 1 tablespoon light margarine


    Instructions


    1. Preheat oven to 350 degrees.

    2. In a small saucepan over high heat, bring water to a boil. Add celery and onion and cook for 2 to 3 minutes, or until soft.

    3. In a medium bowl, combine cornbread crumbs, bread cubes, parsley, sage and poultry seasoning; mix well.

    4. Add broth and egg whites and mix again.

    5. Pour the celery, onions and cooking liquid into the bowl and mix well.

    6. Spray a 2 quart casserole with cooking spray.

    7. Pour mixture into dish and dot with butter.

    8. Bake uncovered for 30 minutes.

    9. Per serving 153 calories.
