Side Dish: Cornbread Dressing

List of Ingredients
- 1/4 cup water
- 1 1/2 cups chopped celery (about 4 stalks)
- 1 cup chopped onion (about 2 medium)
- 3 cups cornbread crumbs
- 4 slices stale or toasted whole grain bread, cut into cubes
- 1/4 cup chopped fresh parsley
- 1 teaspoon rubbed sage
- 1 teaspoon poultry seasoning
- 1 1/2 cups low sodium chicken broth
- 2 egg whites, lightly beaten
- cooking spray
- 1 tablespoon light margarine
Instructions
- Preheat oven to 350 degrees.
- In a small saucepan over high heat, bring water to a boil. Add celery and onion and cook for 2 to 3 minutes, or until soft.
- In a medium bowl, combine cornbread crumbs, bread cubes, parsley, sage and poultry seasoning; mix well.
- Add broth and egg whites and mix again.
- Pour the celery, onions and cooking liquid into the bowl and mix well.
- Spray a 2 quart casserole with cooking spray.
- Pour mixture into dish and dot with butter.
- Bake uncovered for 30 minutes.
- Per serving 153 calories.
