Hawaiian Pork Chops

List of Ingredients
- 4 boneless pork loin chops (3/4 inch thick and 4 ounces each)
- 1/4 teaspoon pepper
- 1/3 cup chopped green pepper
- 1/3 cup thinly sliced onion rings
- 1 (14 1/2) ounce can reduced sodium beef broth
- 1 (8 ounce) can unsweetened pineapple chunks, undrained
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon cider vinegar
- 2 tablespoons cornstarch
- 3 tablespoons cold water
- Optional: Hot cooked Rice
Instructions
- Sprinkle pork chops with pepper. In a large nonstick skillet coated with nonstick cookine spray, cook chops for 4 to 5 minutes on each side or until lightly browned. Remove and keep warm.
- In the same skillet, sate green pepper and onion for 2 minutes or until almost tender. Stir in the next 5 ingredients. Bring to a boil. Return pork chops to the pan. Reduce heat; cover and simmer for 6 to 10 minutes or until meat juices run clear.
- Combine cornstarch and water until smooth; stir into skillet. Bring to a boil; cook for 1 to 2 minutes or until thickened. Serve over rice.
