- 4 pork chops
- 2 cups crushed pineapple
- 2 medium sweet potatoes peeled and sliced
- 2 tablespoons brown sugar
- cooking spray
Instructions
- Place pineapple with juice in a large greased baking dish.
- Place sliced sweet potatoes over pineapple and sprinkle with brown sugar.
- Place pork chops on top of sweet potatoes.
- Bake covered at 350 degrees for 1 hour, then uncover and bake at 450 degrees for 10 minutes.
- Makes 4 servings at 6 points each.
