Kielbasa Casserole

- 1/2 pound turkey kielbasa
- 1 chopped onion
- 2 cups sauerkraut
- 4 potatoes
- 1 can fat free chicken broth
- 2 tablespoons fat free cheddar cheese, grated
Instructions
- Spray a skillet with vegetable oil cooking spray.
- Slice kielbasa and brown with onions in skillet.
- Drain and rinse sauekraut; then add it to the skillet with enough chicken broth to hold it together.
- Place the saurkraut mixture in an 8" square casserole dish that has been sprayed with vegetable cooking spray.
- Boil and mash the potatoes; adding enough of the chicken broth to make the right consistency.
- Place the mashed potatoes over the saurkraut and sprinkle with the cheddar cheese.
- Bake covered for 30 minutes, uncover and bake for 10 minutes more. Then place briefly under the broiler to lightly brown the cheese.
- Serves: 4
