Lemon Garlic chicken

- 1 chicken or parts, skinned
- 10 cloves garlic or 1 head, minced
- 4 tablespoons butter
- 2 large juicy lemons
- 1 teaspoon dried or 1 tablespoon fresh oregano
- Salt
- Fresh ground pepper
- Fresh parsley for garnish
- Lemon slices for garnish
Instructions
- Preheat the broiler.
- Place the chicken in a large baking pan.
- Sprinkle half of the garlic on the chicken and dot with half of the butter.
- Pour half of the lemon juice over the chicken and add half of the oregano and the salt and pepper.
- Broil on the middle shelf of the oven for 15 minutes, basting frequently, then remove the chicken from the oven.
- Turn the chicken pieces over.
- Distribute the remaining ingredients over the chicken and broil for another 15 minutes, basting as it browns.
- If the chicken starts to get too crisp, change the oven from broil to bake until the chicken is done.
- Remove the chicken from the oven and pour the butter lemon sauce from the pan over the chicken.
- Serve garnished with the parsley sprigs and lemon slices.
