Low Fat Lemon Chess Pie

- 1 1/4 cups sugar
- 1/3 teaspoon salt
- 1/4 cup skim evaporated milk
- 1 teaspoon butter flavoring
- 1 grated lemon rind
- 2 tablespoons all-purpose flour
- 2 eggs beaten
- 3 tablespoons fat free margarine melted
- 3 tablespoons lemon juice
- pie shell, unbaked
Instructions
- You may use egg substitute egual to 2 eggs in place of the eggs.
- Sift together, sugar, flour and salt.
- Melt margarine and add to mixture.
- Add milk, eggs, butter flavoring, lemon juice and lemon rind.
- Pour into unbaked pie shell.
- Bake at 350 for 45 minutes or until lightly browned.
