- 2 pounds lean pork tenderloin cut into bite-sized pieces
- 1 (20 ounce) can pineapple chunks in juice
- 1 green bell pepper sliced
- 2 tablespoons lite soy sauce
Instructions
- In a skillet sprayed with cooking spray, brown pork cubes on medium high heat.
- Add remaining ingredients.
- Cover and simmer 45 minutes.
- Uncover, stir and simmer 15 more minutes.
- Great served over rice.
- Makes 4 servings at 3 points each.
