Santa Fe Chicken

- 1 can black beans, drained and rinsed
- 1 1/2 cups frozen corn, thawed
- 1 1/4 cups salsa, mild or medium
- 3 4-ounce boneless, skinless chicken breasts
- 6 tablespoons fat free shredded cheddar cheese
Instructions
- Cut chicken into chunks and saute in a sprayed nonstick pan 3 to 4 minutes.
- Add beans, salsa and corn.
- Bring to a boil. Cover and simmer 10 to 15 minutes.
- Add a little more salsa if you think it is to dry.
- Sprinkle with cheese.
- Cover and cook a minute or two more until cheese melts.
- Makes 4 servings, 5 points each.
