    Santa Fe Chicken

    List of Ingredients


    • 1 can black beans, drained and rinsed
    • 1 1/2 cups frozen corn, thawed
    • 1 1/4 cups salsa, mild or medium
    • 3 4-ounce boneless, skinless chicken breasts
    • 6 tablespoons fat free shredded cheddar cheese


    Instructions


    1. Cut chicken into chunks and saute in a sprayed nonstick pan 3 to 4 minutes.
    2. Add beans, salsa and corn.
    3. Bring to a boil. Cover and simmer 10 to 15 minutes.
    4. Add a little more salsa if you think it is to dry.
    5. Sprinkle with cheese.
    6. Cover and cook a minute or two more until cheese melts.
    7. Makes 4 servings, 5 points each.
