Southwestern Pork Chops

- 1 tablespoon olive oil
- 4 pork rib chops
- 1 cup salsa
- 1/2 teaspoon ground cumin
- 1/4 cup shredded monterey jack cheese
Instructions
- Heat oil in a heavy nonstick skillet over medium high heat.
- Season pork chops with salt and pepper to taste.
- Saute pork chops 2 minutes per side.
- Add salsa and cumin.
- Reduce heat to medium low.
- Cover skillet and simmer 6 to 7 minutes, or until pork is cooked throughout.
- Spoon sauce over pork and sprinkle with cheese.
- Makes 4 servings.
