    Sweet And Sour Pork

    • 1 1/2 pounds lean boneless pork loins cut into cubes
    • 1 (8ounce) can pineapple chunks in juice undrained
    • 1 medium red or green pepper cut into squares
    • 3 tablespoons brown sugar
    • 1/2 teaspoon ginger
    • 1/4 cup vinegar
    • 3 tablespoons soy sauce
    • 3 tablespoons water
    • 2 tablespoons cornstarch
    • 2 cups cooked rice


    Instructions


    1. In a 3 1/2 to 4-quart slow cooker, combine pork, pineapple, bell pepper, ginger, vinegar and soy sauce.

    2. Mix well.

    3. Cover and cook on low setting for 6 to 8 hours.

    4. About 5 minutes before serving, in a small bowl, combine 3 tablespoons water and cornstarch; blend well.

    5. Stir into pork mixture in slow cooker.

    6. Cover and cook on high setting 5 minutes or until thickened.

    7. Serve pork mixture over rice.

    8. Prepare rice 25 minutes before serving.

    9. Serves 4 at 8 points each (including rice).
